Yogurt Sauce

1 32 ounce container of low fat yogurt
Cheesecloth
1 TBS lemon juice
4 cloves garlic crushed
1 TBS olive oil
Dried mint (optional)
Salt and Pepper

1. Strain yogurt in cheesecloth until in gets nice and thick.
2. Mix in all ingredients
3. Refrigerate

Lamb Souvlaki

1 boneless leg of lamb (from Costco or similar)
1 big (1 gallon) Ziploc Freezer bag
4 cloves garlic chopped up or crushed
1 TBS dried rosemary
2 TBS olive oil
1 TBS lemon juice
salt and pepper

1. mix up all ingredients except lamb and put in Ziploc bag.
2. Trim all the fat off the lamb with a sharp knife
3. open out the lamb joint and divide carefully into pieces about 1.5 to 2 inches thick, 3 inches wide and 4 inches long. THESE DIMENSIONS ARE VERY APPROXIMATE. The key is they have to be thick enough so the lamb is not overcooked.....trial and error.
4. Put lamb souvlaki in Ziploc bag, mix with marinade and leave 2 hours or more.
5. Broil souvlaki on high 5-6 minutes per side until nicely browned outside and rare inside.

Garlic Salad Dressing

4 cloves garlic
2 TSP Salt
Pepper
1 cup olive oil
4 TBS lemon juice

1. Crush garlic cloves with salt on a cutting board using the blade of a big knife
2. Put all ingredients in a bowl and whisk until mixed.

Easy Scallops with Garlic

1 pound sea scallops
2 TBS olive oil
2 TBS garlic powder (or 8 cloves garlic crushed)
2 TBS breadcrumbs (supermarket)
4 strips of already cooked bacon cut up (optional)
Salt and pepper

1. Put olive oil in the pan and saute scallops about 2 minutes each side with the garlic.
2. Add bacon and breadcrumbs and saute gently for a few minutes until scallops release some liquid.
3. Add more oil, breadcrumbs, garlic to taste
4. Salt and pepper to taste and serve with a green salad

Baked Sliced Potatoes

2 pounds potatoes
1 onion
1 can chicken stock
2 tbs olive oil
Salt & Pepper

1. Slice potatoes very thin
2. Slice onions very thin
3. Put potatoes and onion in baking dish
4. Add olive oil and mix in
5. Add chicken stock and salt and pepper
6. Bake approx 1 hour at 400 or until brown on top.

Kebab Marinades

For all marinades, mix ingredients, add meat or chicken and leave 2 hours. Then skewer and barbecue.

1. Turkish
3-4 cloves garlic crushed
3 TBS olive oil
1 TBS tomato paste (from tube)
Spices 1/4-1/2 TSP each: cayenne pepper, paprika,ground cinnamon,ground cumin
Thyme
Salt & Pepper

2. Lebanese
8 cloves garlic crushed
3 TBS olive oil
Lemon juice
Spices: ground cinnamon, allspice, pinch cayenne
Salt & Pepper

3. Morrocan
2 onions thinly sliced
1/2 cup chopped flat leaf parsly
1 TSP ground cumin
Salt & Pepper

4. Frank's Recipe (Adapted)
3 TBS olive oil
1.5 TSP cumin
1.5 TSP ground coriander
1.5 TSP turmeric
3/4 TSP chili powder
Salt & Pepper

Lahmajan filling

1 Medium onion chopped
1 Large tomato diced
8 oz lean ground meat
1 TSP Lemon juice
Ground Allspice
Ground Cinnamon
Cayenne Pepper
Salt & Pepper

Mix all ingredients.

1. Spread on flattened bread dough.
2. Bake breads 10-15 mins at 400 till done.

Pizza/Flatbread Dough for Lamajahn

2 Cups Flour
1/4 Cup Water
1 TSP Salt
1 TBS Olive Oil
2 TSP Granulated Yeast.

1. Combine ingredients
2. Make dough
3. Leave until double in size
4. Punch down
5. Divide in 4, and make ovals
6. Push out with hands and fingers on flat surface
7. Put Olive Oil or any topping
8. Set oven to 450
9. Bake 10 - 15 mins until cooked to your liking
