Chermoula Sauce

Goes great with grilled lamb.

Ingredients:

1 cup cilantro
1/2 cup parsley
1/2" peeled ginger
2 cloves garlic
1 tsp cumin
1/3 tsp cayenne pepper
3 tbs lemon juice
1/2 cup olive oil
1 tsp paprica
1 tsp salt

Blend everything until it becomes almost like a mayonnaise. Adjust to taste.

Serve with anything. Very tasty.

Before my friend Susie moved to Rome, she lived down the block from Beppe—the Tuscan farmhouse restaurant on 22nd Street off of Park—and it soon became our go-to neighborhood place. We would head over for links of housemade sausage and white beans ($12), bowls of Norcino—a "Butcher's spaghetti" (sort of roughly cut) with crumbled pork, garlic, Chianti, rosemary and tomato ($18)—and plates piled eye-high with golden French fries seasoned with sea salt and fried rosemary ($9).
